This is a statue of Adiyogi, also known as lord Shiva. He’s the very first yogi, the source of yoga. Can read more about who he is here:

Haven't stayed in any, just took a few classes in Kerala and in Meghalaya (almost 10 years ago!). I'm just starting to practice yoga again for the first time in years - keen on building the habit back up and maybe visiting an ashram next time I'm in India.
